Ricotta would've been a staple in the home of Sal Scaviano, main character in THE OTHER SIDE OF FREEDOM. Mentioned in the story, it was always homemade from excess milk available on the farm.
Note: Half the recipe if you want to practice. Cookware and stoves can differ.
RICOTTA
Ingredients:
Gal. whole milk
1/2 cup white vinegar
In a pot on medium heat, boil a layer of water to prepare the pot. Toss out the water but leave the pot wet. Pour in the milk and cook it for about 45 minutes, stirring every few minutes. When foam forms on top, turn off heat. Pour in vinegar and stir. Immediately remove pot from heat. The milk will curdle. Using cheesecloth in a colander, or a fine mesh strainer, drain the liquid from the curds. Pack down the curds to remove the remaining liquid. Wrap your ricotta in a clean, smooth cotton cloth and refrigerate!
Author's Christmas Fun Fact
My grandfather and father used to cut down a small loblolly pine tree each Christmas to use as a Christmas tree. I didn't appreciate at the time how special it was to have a tree from the family property because it didn't resemble what I thought a Christmas tree should look like. Now the memory means a great deal.
